WINEMAKING
Priest Ranch Cabernet Sauvignon was aged 22 months in 40% new French oak and 60% once used French oak barrels. The lees were stirred for the first year followed by three racking in the second year of aging. The wine was bottled unfined and unfiltered.
HARVEST NOTES
The 2014 vintage was a classic, the third straight year of near perfect growing conditions. The long growing season had warm temperatures, mild heat spikes, and consistent weather throughout harvest. The wines are classic in style, structure, and balance. The harvest for Cabernet Sauvignon began on September 24th and ended on October 15th, slightly later than the valley floor.October 15th.
