WINEMAKING
Our 2016 Mauser was handpicked, sorted, and fermented naturally, then aged for 24 months in 100% new French oak barrels. The lees stirred for the first year followed by three racking in the second year of aging. The wine was bottled unfined and unfiltered. Only three barrels of this limited production Cabernet Sauvignon were produced.
HARVEST NOTES
The 2016 vintage was a classic, near-perfect growing season with warm days and cold nights. The mild summer and warm weather after verasion caused the fruit to develop with good balance, great flavors, bright acidity and mature, well-developed tannins. The Cabernet Sauvignon harvest for Mauser began on September 10th and ended on September 26th, slightly later than the valley floor.
